Chicken, quinoa and kale soup

I love soups that are the Dr Joanna Plate in a bowl. Pure veggie soups are great for snacks or an entrée to boost the plant content of your meal, but on their own they lack protein and the filling power of a low GI carb. Here I’ve teamed protein-rich chicken with low GI quinoa and the nutrient-packed, star food kale. This is one of my firm favourites, but do be sure to use a really good quality stock for flavour (see my recipe in the note below).

Serves 4 Time 40 minutes DF GF NF

1 brown onion, finely chopped

1 garlic clove, finely chopped

2 celery stalks, finely chopped

2 carrots, finely diced

130 g (4½ oz) kale (or other robust greens such as silverbeet/Swiss chard or savoy cabbage), stalks removed and leaves shredded

Freshly ground black pepper
